Savory Cornbread Casserole (Corn Pudding)

A savory and spicy twist on a classic warm and comforting dish, this recipe is somewhere between a cornbread casserole and a corn pudding. It combines the sweet goodness of corn and the excitement of jalapeños for a perfectly harmonious blend of flavors.


This dish is perfect for sharing at parties because it stays hot for at least 30 minutes fresh out of the oven and tastes even better when it cools to room temperature! You can also prepare and bake it the day before and reheat it in a warm oven for ultimate convenience!


Huge shoutout to my Aunt Beth, the one who originally introduced me to cornbread casserole. I’ve made at least a dozen variations of her recipe while trying to find my favorite version, and I’ve genuinely loved every single one!

Ingredients

½ cup melted unsalted butter

3 Tbsp granulated (white) sugar

1 egg

1 cup sour cream

½ cup milk

1 15-oz. can sweet corn, fully drained

1 15-oz. can cream style corn, not drained

½ cup (4 medium or 3 large) diced jalapeños* (optional)

½ cup (½ large or 1 small) diced sweet onion

8.5 oz. box Jiffy corn muffin mix


*Include jalapeño seeds for a mildly spicy casserole, exclude seeds for a savory casserole. For the ultimate spicy casserole, add ¼ tsp cayenne pepper in addition to the jalapeños and seeds!


Instructions

1. Preheat the oven to 350°F.

2. Prepare an 8x8 or 9x9 (square or round) glass baking dish by spraying it with baking spray.

3. Melt the butter in a microwave-safe container and set aside to cool.

4. Set out the egg and sour cream and allow them to come to room temperature.

5. Wash and dry the jalapeños, then finely dice them.

6. Finely dice the onion to the same size as the jalapeños.

7. In a large mixing bowl, thoroughly whisk together all ingredients except the corn muffin mix.

8. Add the corn muffin mix to the wet mixture and gently stir to combine, mixing only until there are no clumps remaining. Do not overmix.

9. Pour the mixture into the prepared baking dish.

10. Bake in preheated oven for 65-75 minutes, or until the top is golden brown, the edges of the casserole are fully set, and the center is slightly jiggly in the center. The internal temperature should be 195-200°F.

11. Let rest for at least 15 minutes to fully set up before serving.
