Jalapeño Popper Pigs in a Blanket

These jalapeño popper pigs in a blanket are the ultimate fusion of two delicious dishes, and you'll never guess what: jalapeño poppers and pigs in a blanket. I bet you didn't see that one coming, did you?!
They are perfect for any occasion, whether served fresh and hot or at room temperature. Somehow they’re even good when cold - perfect for parties where the food will be sitting out for a while. I just know you will enjoy these irresistible little treats!

Ingredients
1 pack (12-oz.) Hillshire Farm Beef Lit'l Smokies Smoked Sausage
2 tubes (16-oz. each) crescent rolls (I recommend Pillsbury Original)
4-6 large jalapeños based on spice tolerance (this is not a "spicy" dish)
4 oz. cream cheese
⅓ cup sour cream
1 ½ - 2 cups shredded sharp cheddar cheese (use 2 cups for extra cheesiness)
½ tsp salt
½ tsp black pepper
½ tsp onion powder
½ tsp garlic powder (I use Badia Roasted Garlic powder)
Instructions
1. Prepare:
Wash the jalapeños and set aside to dry
Open the tubes of crescent rolls and unroll onto a clean work surface
Slice each triangle in half, creating two smaller triangles, for a total of 32 total triangles
Place the crescent rolls onto a baking sheet or tray lined with parchment paper, two layers deep (parchment paper, crescent rolls, repeat)
Cover the baking sheet with plastic wrap and place into the refrigerator to chill
2. Prep each ingredient:
Open the Lit’l Smokies and drain, then pat slightly dry with a clean paper towel
Slice the ends off the jalapeños, cut in half, then use a small paring knife to remove the core and seeds
Finely dice the jalapeños
In a medium bowl, mix together the diced jalapeños, cream cheese, sour cream, cheddar cheese, salt, pepper, onion powder, and garlic powder
3. Preheat the oven
Conventional oven 350°F
Air fryer or convection oven 325°F
4. Assemble:
Remove the chilled crescent rolls from the refrigerator
Set up an assembly line with all your prepared ingredients
Drop a spoonful (approximately 1-2 tablespoons) of the cream cheese mixture onto the wide end of each crescent roll
Use a damp fingertip to flatten out the mixture, forming a 2-3 inch long rectangle
Place a Lit’l Smokies sausage on top of the cream cheese mixture and press it down to secure it in place
Roll each crescent roll tightly, starting at the wide end and ending at the narrow end
Place the rolls onto a baking sheet lined with parchment paper, making sure they are close but not touching
5. Bake:
Bake in preheated oven until golden brown
Conventional oven: 10-12 minutes
Air fryer or convection oven: 8-11 minutes
6. Serve:
Allow to cool for at least 5-10 minutes before serving
Serve alone or dipped into homemade ranch dressing. They’re amazing either way!
